Mango Tilapia

This is a really healthy recipe. Basic ingredients for a very nice sweet and sour recipe.For sure your guests will be impressed when they will realize the recipe is so easy.

Ingredients:

4 tilapia fillets
2 large shallots peeled
3 teaspoons minced garlic
1 jalapeno chile chopped
1/3 cup cider vinegar
2 cups chopped peeled mangoes
1/3 cup fresh orange juice
1 tablespoon chopped thyme
2 teaspoons olive oil
1/4 teaspoon salt

Instructions

In a food processor, combine garlic, chile pepper, and shallots. Process until minced.
Add the vinegar, mango, thyme, orange juice, olive oil , salt and process until smooth.
Place the mango mixture and the fish in a zip-top plastic bag; seal and allow to marinate in the fridge for 30 minutes.
Then remove fish from the bag, and set the marinade aside.
In a small saucepan, pour the marinade and bring to a boil. Reduce heat, and bring to a simmer and cook for 5 minutes. Then remove from the heat.
Prepare your grill. Place fish on the grill rack..
Cook 4 minutes on each side or until fish flakes easily when tested with a fork.
Place the tilapia fillets in the plates and pour the mango sauce over.
