Linguine Al Pesto

Ingredients:

1 1/2 cup fresh basil leaves
4 tbsp pine nuts toasted
3 garlic cloves minced
4 tbsp parmesan cheese grated
4 tbsp pecorino cheese grated
1/2 cup extra virgin olive oil
2 tbsp butter
Salt and pepper

Instructions

Cook the pasta al dente according to the package instructions
In a food processor add the basil, toasted pine nuts, minced garlic.
Pulse everything together then while it’s still processing, gradually add the extra virgin olive oil.
Once everything is well combined stir in the parmesan cheese and the pecorino cheese
Heat the butter in a frying pan over medium heat
Add the drained pasta and the pesto sauce and toss until well coated.
Garnish with parmesan cheese and basil leaves. You can even add few baby potatoes.
